German Name:  Erbsen

Swiss Name:  Erbsen

French Name:  Petits pois

Italian Name:  Piselli

Also known as the garden pea or green pea. Peas begin to convert their sugar to starch the moment they are picked. For this reason, it is always best to purchase the freshest peas possible and consume them as quickly as possible.

Season:  The optimal time to purchase fresh peas is from the beginning of May until the beginning of June, although fresh peas can be found until the beginning of July.

Purchasing Tips:  Look for plump, unblemished and bright green pods. Try the inside to gauge the sweetness and crunchiness. The peas should appear somewhat glossy. The pods should not show any signs of drying or yellowing.

Storage:  Refrigerate in pods for no more than 2-3 days. Peas are best eaten soon after purchase.

Cooking Tips:  Fresh peas can be eaten raw, boiled or steamed. The pods make a wonderful broth when simmered with one carrot and one onion.

Nutritional Info:  Rich in Vitamins B and E, and also possessing carbohydrates, calcium, phosphorous, niacin, and vitamin A.
