a fresh approach to tasting...

There are many interesting and detailed instructional books on how to taste, which mostly offer a very good theoretical foundation of knowledge. What books can't teach, however, is the practical aspect of tasting - this is better learned first-hand through our own eyes, nose, and palate.

Our how to taste series offers you a unique opportunity to explore, understand, and develop your own tasting skills.

wine classes

We offer four separate wine classes, each focusing on a specific wine style. You can choose to attend all of the classes, or simply sign-up for your favorite.

Each class begins with a fun and unique way of exploring your own senses and sensitivities. Next, you will learn how to apply a systematic structure to wine tasting. Finally, you will discover the main factors in matching wine with food...and have an immediate opportunity to apply your new skills with a variety of food you can match with a nice sampling of wines.

introducing swiss wines

The vineyards of Switzerland have a remarkably wide range of very good wines and local specialties – many of which are one of a kind. These rich traditions are often disappointingly overlooked and under-publicized. This class will reveal the characteristics which make Swiss wines an exciting discovery for wine enthusiasts. You will learn the key factors which contribute to quality production and the development of unique qualities, discover how to interpret various Swiss labels, and be introduced to the key grape varieties and wine producing regions. At the conclusion of the class, you will enjoy a nice sampling of regional Swiss foods combined with various Swiss wines.

seasonal wine & food

Successfully matching wine and food is not an easy mission. Food changes depending on how it is cooked and who cooks it. Wine is also influenced by many different factors, which can impact its personality. This class takes a closer look at how seasons influence the dynamic world of matching wine and food. You will discover how the change of seasons alter our taste sensitivities, and how cooking methods change to reflect new seasonal food desires. The majority of this class is participatory. We guide you through a multi-course seasonal meal and provide you with an opportunity to compare different wines with each course – and of course, discuss your results. A fresh new course is offered during each season of the year.

whisky for beginners

The interest in whisky is significant and growing...the choices are also significant and growing, and it isn't easy for beginners to enter into this intimidating and expensive world...Our class for whisky beginners attempts to remove those barriers. You will receive a very clear overview and explanation of the different whisky styles from Scotland, Ireland, and the USA - then more detailed explanations (and samplings) of Scotland's various styles. To end the evening, we will discuss matching whisky with food - and of course, serve you a nice selection of various foods.
