This class explores the seasonal fruits and vegetables of Europe. We begin each class with an introduction to a selection of fresh European fruits and vegetables. You will receive useful purchasing and storage tips, discover what to look for and what to avoid. Then, for some selected items, you will have a chance to participate in learning how to prepare the product – how to clean, peel, and slice. The class will conclude with a small meal that was freshly prepared during the class – of course the meal will be accompanied by a glass of wine or two.

Pasta is one of the world’s favorite foods...but making the dough can be a tricky exercise. This class will explore the traditional method of making a dough by hand. We begin with an introduction to the ingredients that will be used during the evening, and an explanation of the types of pasta we will make. Next, we dive into making the dough – almost literally. You will make three different doughs – all from scratch, all by hand, and each using different ingredients. After the doughs are made, you will begin making a filled pasta, a cut pasta, and finally a shaped pasta. To conclude the evening, you will have a chance to sample your pasta with three different sauces and enjoy a nice selection of red or white wine.

We begin with an introduction to the ingredients and techniques that will be used during the evening, and an explanation of how to use colored, aromatic and imprinted pasta. Next, we begin making pasta! You will participate in making three different doughs: one colored, one aromatized, and one imprinted. Afterwards, we will make a filled pasta, a cut pasta, and a shaped pasta. Finally, you will have a chance to sample your artistic creations with three different sauces and enjoy a nice selection of red or white wine.

The moist, satisfyingly substantial texture of the dough make it a good partner for a broad range of sauces and other ingredients...but making the right combination can be tricky! This class will explore five distinct methods used in making pasta sauces. We will begin each class with a short introduction to the ingredients and techniques that will be used during the evening. Then...we'll cook. We will carefully explain and demonstrate five methods of making a pasta sauce, and explain which pasta types are appropriate for each sauce style. During the class, everyone will have a chance to help out in making the sauces. At the conclusion of the evening, you will have a chance to leisurely sample each of the sauces while we serve five pasta dishes - of course along with a nice selection of red or white wine.

Chocolate and wine represent two of the most complex flavors of the world. Bringing them together into a winning relationship is however, a challenge. This class will offer you an opportunity to learn how to taste chocolate, understand various methods in cooking with chocolate, and how taste elements are created using various methods of chocolate preparation. You will also be introduced to five wine styles, and discover how they can successfully match with your favorite chocolate recipe. Of course, we encourage your direct participation throughout the evening and advocate a lot of sampling…so be sure to bring a healthy appetite for indulgence!

Pumpkins play a major role in defining the flavor of fall. Each variety of winter squash has its own flavor, sweetness, color, and texture. This class takes a closer look at pumpkin varieties available in Switzerland as we explore the nuances of cooking with pumpkins. You will learn how to purchase and store pumpkins, and have a chance to participate in preparing a complete pumpkin-inspired menu – which of course you will enjoy at the conclusion of the course with a nice selection of matching wine. This class is only available from October – December.

Potatoes are the most consumed vegetable in the world, and they provide most of the world’s nourishment. In Switzerland the potato plays a key role in defining traditional recipes and is integral in the development of new traditions. This class takes a closer look at potato varieties in Switzerland, and offers valuable purchasing, storage and cooking tips. You will have a chance to participate in preparing a complete meal featuring…well…potatoes! Of course, you will also have the opportunity to enjoy a nice selection of matching wines throughout the evening. This class is only available from September – February.
